This is a watermelon puree made into jello. The mint and rum make this dish a very refreshing dessert or side.
4 cups watermelon
4 packets of gelatin
1 cup sugar
1/4 cup spiced rum
1 bunch mint leaves plus additional for garnish
In a food processor, add the watermelon and mint. Blend until smooth.
In a small bowl, slowly mix the spiced rum into the gelatin until dissolved.
In a small saucepan, mix together watermelon puree, dissolved gelatin and sugar. Bring the mixture to a boil and reduce heat to low. Simmer, stirring constantly, until thickened, 10-15 minute
Rinse 2 mini loaf pans with water. Do not dry. Pour the thickened watermelon into the pan and refrigerate overnight.
When ready to serve, place a serving plate over the loaf pan. Hold the plate and pan together and flip upside down. The watermelon should just fall out of the loaf pan.
Add a sprig of mint for garnish.
Serve.
